Subject: Ceramic vs. paper (latte), why such a difference?

I just drank a very delicious 5 or 6 oz latte made with a shot of DSB. For some reason this seems to be the best ratio of espresso to milk. I even made it with the very first shot of the day made with the La zocco, no grinder adjustments, etc. I just can't figure out why I can't reproduce this drink in a paper cup. I can't even make the same drink with a bigger flat-bottom cup, only with the small rounded latte/cappuccino cup. Randy R

It's a small (5 or 6oz) glass, with a good double in. As with you, the first shot (which is usually not the best as it's my seasoning shot that I keep if it looks OK). I make mine with 3 oz espresso and 6 oz of 2% milk. It fills a 15 oz bowl way over the rim if poured slowly. The crema mixes with the micro-foam around the top of the bowl and seems to accentuate the chocolate flavor. I rotate the bowl a little with every sip to make sure I get some of that delicacy and it lasts to the very last drop. When there is only foam left, I lick it with a finger - impolite but soooo gooood... A pre-warmed nice quality white ceramic bowl is mandatory. In my mind, it would be a sin to even try to do this in a paper cup.
