Subject: Chemex Melitta filter holder
I guess I'm getting old because it's not as much fun fabricating stuff
anymore.

I'm resurrecting the Chemex but I want to be able to use Melitta filters
(more comfortable with their quality control). I once had a friend who'd
fabricated a wire insert that held the Melitta filter in place while
supporting the bottom to keep it from splitting. Does anyone know of a
source for something like this?

I never had a problem with splitting, maybe because I only make about
a quart per batch. I just use the perforated disc from a Bodum to
maintain the filter's shape. This sits above the "cake" when making
this much less than a full "pot" and it helps control blooming when
the beans are very fresh. Of course, the bottom of the filter should
not rest in the trough leading to the spout, and it helps if you pour
slowly, or let a machine do this for you.

I don't know of a source for what you want, but I'm curious as to why
you don't just use a Melitta filter cone. Is it because you like the
looks of Chemex? If so, fair enough (so do I), but the main point of
the Chemex, at least according to Chemex, is the paper filters.

Howdy Andy!

I like the looks of it more than the Melitta cone, but I do not like the
filters - simple huh? I've taken all of the coffee/espresso stuff out of
the RV & am going with a simpler combo - Bunn grinder, electric kettle, & a
Chemex pot.

I'm glad you've had no issues David, but what I asked was has anyone seen a
commercial version of the device my friend used - it was a wire basket
designed to hold a Melitta cone filter so the bottom wouldn't burst when
used in a Chemex. I don't like the Chemex filters plus they can be hard to
find; a problem if you're specialty isn't inventory control.
