I'm getting a lot of fines in my espresso shots. But sometimes more than others. What causes this? My grinder is a Mazzer Mini. I'm going to guess I've ground about 100 lbs. of coffee with it so far, much of it Malibar Gold. It seems like I've always had this, even when the grinder was new. One thing is for sure, espresso tastes a lot better without the fines. Thanks. -Tony-

While a few fines don't tend to bother me, here are some ideas to help: Try a coarser grind and, if need be, increasing your dosage slightly to compensate. Obviously, the larger particles are less likely to escape the puck/filter, but in addition to this you'll hopefully be decreasing the brew pressure, which could (at the moment) be slightly higher than the 8.5-9bar region due to the setting of your machines OPV (...assuming it has one) and will force more smaller particles through into your cup. However, before doing even this you could start by playing around with slightly different tamping techniques. I've found that tamping differently can actually have a pretty huge impact on the amount of fines that pass, as the puck's integrity surely must be somewhat of a factor when looking at this.

So as not to start another "why doesn't anyone reply to me.." thread, ;-) if you have noticed an excessive amount of fines using the same coffee at the same roast level it can be: 1) a worn or cracked PF basket that needs replacing 2) tamping on a surface with coffee on it and coffee gets on the PF spouts which subsequently gets rinsed into the cup 3) worn burrs With only 6 years use on my Rocky I have replaced the burrs twice (on my third set now, counting the originals). I could notice the difference each time they were replaced. It normally gets light daily use. I would ROUGHLY estimate that it has ground ABOUT 250 pounds of coffee. That does not sound like a lot, but add a few bits of concrete here and there from some Yemen dried on old drying pads and a small rock occasionally, and it doesn't take much to dull a set of burrs.
