When I get a new roast, I usually set my Rocky to 10 and adjust similar to what Harry described above. I seldom have to adjust out of the 8-12 range for a 25 second 1-1.5 oz shot, and my Rocky goes burr to burr at 3.5. Mine is usally 10, 11, or 12 depending on all the aforementioned variables. The right grind will depend upon the freshness of the coffee, the humidity, the temperature, and other variables. One author includes the alignment of the stars. But set it a few detents above the finest setting and try it. Adjust to get a 25-30 second double shot. I have to adjust mine almost daily when the humidity changes like it has the last two weeks. For example, the setting I used yesterday to produce a 25-second double shot was too fine today and resulted in a 40-second shot of slightly under 2 ounces [50 cc].
