Subject: DP & WP Sidamo

I've been using a dry process Sidamo from Sweetmarias, and I love it. For me, it is better than the Yirgs. Now in this latest sampler, they sent a wet process Sidamo and I've not yet had a chance to roast it. So what differences can I expect between the two processes? The Sweetmarias site doesn't show this WP Sidamo, so I can't see Tom's description.

Dry Process coffees have slightly less acidity than wet process, but have fuller body because of drying the whole cherry that imparts full body & natural sweetness to the beans. The WP versions aren't as special IMO, I prefer WP Yirgacheffe over the WP Sidamo. DP Yirgs are very special also if you get a chance to try some, SMs had the Idido Misty Valley Yirg. They also have the Likempti which is one of my favorites lots of Chocolate and Apricot, its really special. Of course you can also pay much less if you do some searching. I'm not as enamored of the Yirgs as I have been of the DP Sidamo I have. I think I need to play with roast levels more on it to see if I can be convinced...
