Subject: DP & WP Sidamo

I've been using a dry process Sidamo from Sweetmarias, and I love it.
For me, it is better than the Yirgs.
Now in this latest sampler, they sent a wet process Sidamo and I've not
yet had a chance to roast it.
So what differences can I expect between the two processes? The
Sweetmarias site doesn't show this WP Sidamo, so I can't see Tom's
description.

D.P. Dry Process coffees have slightly less acidity than wet process,
but have fuller body because of drying the whole cherry that imparts
full body & natural sweetness to the beans. Wet processed coffees have
increased acidity.

I doubt that I have access to that mag as our library is pretty small,
but I'll check.
From what you say, I'm assuming the increased acidity will make it more
'bright' than a DP?

Of course, you're welcome! You'll have to wait till the next issue comes
out though, to be able to view Tea & Coffee Sept 2006 issue, page 52 7
page article "Green Coffee Processing"., when it becomes archived.
Hopefully that article is one that's archived, I didn't check archived
issues to see if the whole individual issues are archived., or just
certain selected articles & stories..

DP sidamo's have been extraordinary this year. They have been
fruit/chocolate bombs at lighter roast levels. The WP versions aren't
as special IMO, I prefer WP Yirgacheffe over the WP Sidamo. DP Yirgs
are very special also if you get a chance to try some, SMs had the
Idido Misty Valley Yirg. They also have the Likempti which is one of my
favorites lots of Chocolate and Apricot, its really special. Of course
you can also pay much less if you do some searching.

Thanks for the info.
I'm not as enamored of the Yirgs as I have been of the DP Sidamo I have.
I think I need to play with roast levels more on it to see if I can be
convinced...
