Apart from being awestruck -

http://www.wholelattelove.com/DeLonghi/bar32.cfm

retrofitting the steamwand with copper tubing for working latte
directly in 6oz. half-sized beermugs, or a smoking piece of heat
insulation tubing wrapped around the hot side to the boiler, there's
the "other" thing - DeLonghi's pattented crema enhancement device:
Sempre Crema Holder, intended to "produce delicious caramel-colored
crema to top off your espresso."

Oh, heatshrink tubing appears to have taken care of the asbestos
insulation until the elements lose resistance or a boiler meltdown
occurs.

Another interesting thing is the way the Sempre Crema Holder functions
as pressure restrictor beneath the portafilter's cup. Simply unscrew
it from the bottom as intended for normal cleaning. Separate from the
rubber gasket, the screen filter from the Sempre Crema mated beneath.
Notice in the top center Sempre Crema a plunger. The plunger may be
depressed with your finger and will release a stop valve from the other
side. During operation, hot water pressure forces the valve down at a
predetermined buildup. Cut a 3/8" section off a smaller paperclip to
form a U the width of the outer edges of the plunger. Depress, from
the top side, the plunger and insert the U-section from the paperclip
into the extended valve beneath. The portafilter will now be
permanently "open" without having damaged the Sempre Crema device.

Just tried it for the first trime and like the results much more than
with any Sempre Crema restrictions. A much more freer flow for
concentrating on grind and tamp.
