Subject: Double espresso. How much water to use.

How big is a double espresso ? I'm new to this & my double espresso shots are approx 50ml. Is this about right ? TIA Dave....................... In an uncharacteristically sunny Scotland.

Use the double basket and pull a "standard" double shot, then add hot water. You get a larger beverage that is generaly smooter than trying to force too much water through the coffee. Just pull 2 5 oz. cups through the loaded portafilter with a double=shot filter. Makes for a smooth, strong coffee. Personally I find Americanos to be a bit watery.

You may be going for the shorter 30ml shot, because you are getting early 'blonding' before the 27 secs. This may be caused by chanelling of the puck, which suggests uneven distribution of the grounds in the basket. John Weisse's method with a needle (I use a cocktail stick) http://www.home-barista.com/weiss-distribution-technique.html is a good read. There could be other factors, if you mention your machine and grinder, other alties may know if there's a problem - or maybe you just prefer the taste of a shorter shot. BD
