We are cranking out what seems to be some excellent gelato these days using PreGel mixes from Italy. The reviews from transplants from New Yalk seem to confirm we are on to something. I'm wondering if anybody with experience in commercial quantity batches of gelato have a recipe or thirty they would be willing to direct me towards. The pre-mixed batches are seemingly excellent quality and not that expensive. But, I'd like to raise the bar as much as I can in a commercial environment without becoming a factory. Thanks. Bernie
