Subject: Green Bean Storage


I have around 75 lbs of green beans at home that I roast in my 1 lb
roaster. Does anyone have suggestions as to the best way to store
these beans? I do not want to keep them open for fear of some possible
insect infestation, but I do not want to seal them in something like
Tupperware for fear of rotting.

The best way to store them depends on the average
relative humidity where you live. Near as I can
determine, that's somewhere around/between Akron
and Cleveland. As a somewhat informed guess, yet
a guess nonetheless, I'd estimate your RH somewhere
in the 50% range, so left in burlap, your beans will
tend to get dryer than ideal.

Ideally, you want to keep them between about 65%
and 70% relative humidity.

In your situation, yes, you do want to keep them
sealed in something airtight. You don't have to
worry about them going moldy unless they're at or
above 14% moisture content.
Unless they're just off the boat, or have been
recently stored in a damp basement, you don't have
to worry about that.
