Subject: Mars, the God of coffee, smiled on me.


I just had someone validate my roasting/shot pulling skills. I made some
friends & me shots using My La Pavoni Europiccola & Columbian Mesa de los
Santos roasted to a heavy Vienna/light French roast. These were the normal
very good shots so I made us some more & for some reason these were the best
I've ever made or had.

The crema was average to good but the shots were creamier & fuller tasting
than before. Everything was the same from shot to shot; double doses ground
just prior to using & a 30 lb tamp. I use an infrared thermometer & damp tea
towel so I know the group temps were the same & I used the same effort to
pull the shots both times. Since all variables were as close to the same as
I could make them I can only assume that the Mars, the God of coffee, was
smiling during my second pulls.

I wish I had my camera handy when one of my buds actually used his finger to
wipe up the dregs from his cup. We'll play pinochle at his house next week &
I'll bet he practices all week so he won't be embarrassed serving his usual
slop.

I suggest you read your own post about your excellent shots and how
you colleague was going to have to put in hours practicing to get to
your level. That was you, wasn't it? If not, then I am wrong.

BTW, if there is a god of coffee, it would be, more appropriately,
Pan, because, according to the common wisdom, it was goats eating the
berries that tipped man off to coffee.

I'm not going to give you a hard time for speaking what you believe to
be the truth about your colleague's espresso. In most cases, people
just don't know what it takes.

I had some of the best microfoam I've ever had in a commercial
establishment last night.. and beneath it was some awful espresso.

In regards to your good fortune in your extractions.. congratulations.


Is there a god of coffee? I wouldn't think so. Coffee was used as
offerings to gods, or offerings to priests who contacted "gods". I am
not entirely sure there is a mention of a god OF coffee.

Then again, I could be (and probably am) wrong.
