Subject: OTB : Serendipity?


For the most part I embrace the ~50mL / ~25s espresso rule. Anything
too far outside this box severely compromises the cup.

This morning I decided to try a Ruvuma SO as espresso. This coffee is
a mocha bomb as press or drip.

I cleaned the remains of the blend from the M4, water danced and dosed
up the PF.

First drips at ~12s, so grind too fine...

The shot ran very slowly but looked perfect: tiger stripy, good color,
great crema so I let it run for 50s to ~50mL.

I expected it to be bitter and overextracted.

Not quite in the third level of the pantheon, this shot was amazing.
An intense rich mocha taste with an undercurrent of 80% cacao
chocolate.

Tomorrow, I'll start with this and see if it can be replicated.

Question :
Anyone regularly pulling 'exciting' shots way out side the ~50mL/~25s
box?

Yeah, I have had some great shots that were way over the 30 sec mark,
haven't had a great shot under 20 though, had a couple that were drinkable,
but none great.

I have found the outer marker seems to be around 75 seconds - the first part
of the shot is cooling off by then (and boredom is setting in)

Happens to me often enough that I tend more to 35 sec than 28 -
often up to a minute.

It may not have been serendipity - try some more...
