Subject: Reminding myself


There are times when it is provident to remind ourselves of things that we
already know.

Although I consume on a daily basis the various drip coffees that I am
fortunate to roast, my espresso indulgence has been relegated to the
"occasional treat" category. The primary reason is the use of my somewhat
inadequate grinder to serve both functions. When I do not dissasemble and
clean the grinder thoroughly after grinding espresso, the taste of my
drip is adversely affected. Human nature often prevails, and I wind up
saying to myself "I'll treat myself to an espresso - tomorrow."

The other day, I pulled two shots, and they were abominable. Somewhat
sour, bitter and almost devoid of crema would be a kind appraisal.
Yesterday, after an exhausting day traversing the big city sweltering
in high heat and humidity, I pulled two more. They were close to
perfection! Looking at my notes, the only difference was the time between
roasting and shot making. The abominable examples of my SM Monkey blend
had been roasted twelve days prior, and the fine examples roasted two days
before they were ground and used.

The solution, I keep telling myself, is for Santa Klaus to arrive with his
sleigh and bring the new espresso grinder, which will be kept for only
that purpose, and retaining the old grinder for the daily drip.

Yes, Virginina, there is a Santa Klaus. (So sayeth the editorial)
