A few days back at Home Barista, there was a survey on who used Single baskets. I never had. After routing the Single basket out from the espretitus, I tried a shot, er, drop. Having just savored a mellifluous double, I was somewhat perplexed... The Math : Single Double Grind Wt 13.5 18 grams Screen Area ~600 ~1400 mm˛ Best method to pull a single keeping the grind the same? Underdose? Undertamp? Dump half a double? Comments?

Cafe Luxxe in Santa Monica, when I ordered an espresso last week, poured a double (one into a cup, and one into a shot glass), gave me my cup and after examining the crema/pour in the shot glass, dumped it. I have never been able to get a decent shot out of my single basket, not that that proves anything. I asked the owner about the practice and apparently that's what they do when they need a single shot. In the future I intend to always ask for doubles so I don't have to watch such excellent coffee get dumped! Pavone Professional Lever and ECM Botticelli. Conversely, I've only used the Double basket a couple of times in a decade on my Atomic stove-top.......
