Can somebody quickly tell me whether there is any benefit, or the reverse, of storing newly roasted beans in an airtight or vacuum container? I know they need to outgas, but what's the story on exposing them to oxygen?

I personally prefer the flavor that develops when the freshly roasted beans are exposed to air, so I store them in an open bowl in a dark and reasonably cool cabinet while they degas. The only exception, for me, is that if I'm going away or for some other reason need to have fresh coffee on short notice, I'll vacuum seal the beans right out of the roaster and throw them into the freezer. The flavor, for me, doesn't seem quite as complex, but they're there when I get back. Hope this helps. Best, David
