Subject: The Unruly Brazilian.

So, I ordered some SO espresso beans last week. Some Yirgacheffe and some Yellow Bourbon. I hadn't tried either one before. Anyway, the Ethiopian is great, it pours nice and everything. Then I try the Brazilian and all hell breaks loose. Every bad thing you could ever see from a bottomless portafilter seems to happen 99% of the time. I don't do anything different with the two, except adjust the grind. Anyone have any insight? Thanks.

The yellow bourbon is a much more elastic bean, as are most low growns; this reduces the fines and makes channeling more likely. Grind *** a lot *** finer, let it near choke, and don't worry too much about long pours -- this is a mild bean and can take it. The alternative is a 5 minute levelling and tamping ritual.
