This is probably only relevant to UK-based would-be home roasters.

UK roasters using popcorn poppers will know that our main problem is
slowing down the roast - UK poppers run too hot. There are various
ways you can do it, most of which require various amounts of
cannibilisation of stuff (eg, take one light dimmer, up-rate a couple
of components, add a heatsink).

Maplin has just discontinued a power control module that will control
2600 VA at 240 V, for six quid (which looks quite a cheap price).
You need to add a 470 K-ohm variable resistor, and a heatsink, but all
teh real electronics are nicely hidden inside a little black box.

The power module was order code N63AW.
A suitable resistor is JM75S (I think)

I only found out about the module two days ago - at that time most
stores were listing a few in stock. It doesn't show up on the web
site now, and I don't know what happens to store stock that gets
discontinued.

It was described by Maplin as "Output Regulator", is made by 'Kemo',
who call it a "Power control module", article number M028. If you
have a local branch, you may still be able to get one, and it may be
even cheaper now...

I still use the stop start method - roasting during the hot july was a
right bloomin pain though!! seemed you could either chhoose between
underroasrt and overroast....
