coffee is 95-98C ( 203-208 F ) . According to my notes, colder water
doesn't extract enough caffeine/essential oils from the beans, and above

I brew most of my drip right off the boil. Cheaper, less flavorful coffees
don't do so well with water that hot. So I'd say your 203 to 208F works
well for me in a manual drip pourover.
