Ciao from the Veneto, ya'll,
It was a busy week & I didn't get to see the Maltoni museum. I've been
promised a personal tour before we leave Thursday. I'd forgotten what
espresso is like until I sat down for breakfast in the Piazza dei Signori.
It was head & shoulders above anything I've had in this country. Better than
whatever Seattle can offer, same for New York & Boston. Maybe it was the 50
year old spring lever the maitre dei used to pull the shot table-side al
fresco. Or maybe it was the maitre dei's 50 years experience using the
machine? The guy must have thought me nuts when I had him make me 4 more
shots just so I take notes!

Anyway, I've been following the threads here even if I can't contribute
much. A points: 1) I wouldn't use the method suggested by someone to test
pumps - unless your life insurance is paid up. Water spraying over
electrical connections isn't too healthy. Either take the pump out to test
or get a piece of tubing long enough to port the water to an external
container. 2) La Pavoni's can outperform electric pump machines, hands down;
IF one takes the time to master the techniques. Don't shoot for too much
pressure though or you'll break the cheap plastic piston used on later
models. Maybe that's not such a bad thing as you can then replace it with
the superior brass piston. 3) I've used pumps from several manufactures &
they've all been interchangeable. What is different is the mounting
hardware - even among the Gaggia line there are 3 o4 different mountings.

I subscribe to the new-found attitudes of civility advocated by some, but
I'll take a wait & see position to see how long it takes to revert to
normal. I do take heart however in the ad hominem attacks on Randy & Ken.
All they're doing is eating up the bandwidth with their sneaky attempts to
promote their web sites under the transparent guise of helping people. Have
they NO shame?
