Hi all m wife and I are thinking seriously about investing in a mobile espresso cart/espresso catering business. I've been looking at commercial suppliers, and they all seem to meet similar standards, in so far as water tank size, sinks, etc. I talked to our local state health department, as the inspector rold me that my cart would need a 40 (!) gal fresh water tank, and a 45 gal waste water tank, a three bay sink and a hand washing sink. What she is telling me is nothing like what I am seeing online. Has anyone else run into this? Anyone have any input? Much thanks Bill N.

In most areas the state is not the correct place for such info. Usually it's the county or even city whose regulations you must adhere to. Do a Google search for your "<county > <state> food safety regulation". There are lots of them that are NSF certified and ready to go. It may be a bit of travel for you of you can have it shipped frieght and for around $500. Either way you'll save a ton. Look for your local codes online. good luck...

There are on ebay always a good number of carts -- barely used, ready to go -- for far less than new. Why there are so many should give one pause. Have a good location (#1) and turn out a GOOD product and you will be well on the way.
