Subject: how to alter temp/pressure on gaggia paros?

as in the title. i took a temperature of my paros under the empty pf. it goes to around 88C in the 5th second, but drops really quickly, until 76-78 in the 20th second. the problem with the huge drop it that i get an unusual blonding after the 20th second, and the espresso always tastes quite sour regardless to my coffee bean, grind, and tamping. perhaps my measurement is not accurate or methodologically correct, but i'd be very grateful for anybody to teach me how the machine works. wormwood

Do a Styrofoam cup test & then play with preheating times and/or using the steam thermostat to attain proper temps. Temperature surfing...how do I do that? I'm a newbie in the espresso world and need much guidance, especially when it comes to electrical parts. I've read Randy Glass's page about temp surfing, but don't quite follow.

"Temp surfing" is the use of the steam button to get the heating element(s) to heat up the water a bit hotter. When you're about to pull your shot, hit the steam button for one to five seconds (experiment) and then brew. This is an inherent characteristic of the domestic Gaggias. Someone here posted detailed shot temp profiles proving this and the reason is the cold water inlet being part of the group head.

The Gaggia design is much better with that separation between the inlet and outlet and it will take longer for the cold water to affect brew temps. Also as David mentioned, the OP is measuring temps under an empty pf so the amount of water passing is much greater (2-3 times) than when a puck is present restricting the flow.

There is NO way to change the pressure on a Gaggia.
