Subject: how to alter temp/pressure on gaggia paros?

as in the title.

i took a temperature of my paros under the empty pf. it goes to around
88C in the 5th second, but drops really quickly, until 76-78 in the 20th
second.

the problem with the huge drop it that i get an unusual blonding after
the 20th second, and the espresso always tastes quite sour regardless to
my coffee bean, grind, and tamping.

perhaps my measurement is not accurate or methodologically correct, but
i'd be very grateful for anybody to teach me how the machine works.

Do a Styrofoam cup test & then play with preheating times and/or using the
steam thermostat to attain proper temps. The reason for the Styrofoam test
is to give you a test result that is repeatable; measuring temps in the flow
has too many variables to be reliable.

Temperature surfing...how do I do that? I'm a newbie in the espresso
world and need much guidance, especially when it comes to electrical
parts. I've read Randy Glass's page about temp surfing, but don't quite
follow.

"Temp surfing" is the use of the steam button to get the heating element(s)
to heat up the water a bit hotter. When you're about to pull your shot, hit
the steam button for one to five seconds (experiment) and then brew.

This is an inherent characteristic of the domestic Gaggias. Someone
here posted detailed shot temp profiles proving this and the reason is
the cold water inlet being part of the group head.

But at least on this one the cold water entry (part 16) appears to be at the
base of the boiler and the hot water feed to the brewhead towards the top
via the tube part 17 here:
http://www.partsguru.com/GaggiaEspresso.html#Exploded%20diagram

On some boilers like this one here on a *$ Barista
http://partsguru.com/Page4.html
the cold water entry (by part 36 on the internal parts diagram) is right
next to the tube (part 39) that carries the hot water to the brewhead so
incoming cold water mixes with the hot water right where it gets taken down
to the brewhead and directly messes with the brew temps.

The Gaggia design is much better with that separation between the inlet and
outlet and it will take longer for the cold water to affect brew temps.
Also as David mentioned, the OP is measuring temps under an empty pf so the
amount of water passing is much greater (2-3 times) than when a puck is
present restricting the flow.

There is NO way to change the pressure on a Gaggia.

(Without changing the OPV or doing other wierd mods)
